While many winemakers boast about the work they do “by hand”, we would wager that very few of them could compete with the list of manual tasks performed at Lancelot-Royer. From harvesting to pressing to riddling to disgorging to bottling, physical labor, not technology, is the rule at this house in Cramant. The cave itself is a masterpiece of human tenacity; some __ meters of passageways were dug into the chalky-soil hillside, by hand of course where the wines age gracefully under perfectly damp and dark conditions. The Cuvée des Chavaliers Brut spends nearly five years aging sur lattes before disgorgement
